Chicken Tater Tot Casserole


This Chicken Tater Tot Casserole is one of my favorite weeknight dinners! I love that it is beyond quick and the oven finishes it off. I love how flavorful this dish is with how much minimal work is involved. I could go on but I think you get it… I love this dish! It all around is such a great dinner. 2 cups chicken, thawed and cubed

1 Tbl. Olive oil

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. cumin

1/2 tsp. red pepper flakes

1 can chicken broth

1 can diced green chilies

1 can cream of chicken soup

1/2 cup sour cream

2 1/2 cups cheddar cheese, grated

Frozen Tater tots to cover the bottom of a 9×13

Directions:

Heat olive oil in skillet on medium heat. Add chicken, garlic powder, onion powder, cumin, and red pepper flakes. Cook until chicken is no longer pink in the middle.

Add in the chicken broth and let warm up. Add in chilies, soup, and sour cream. Mix in 2 cups cheese. Stir well.

In a greased 9×13 pan, cover the bottom with tater tots. Pour chicken mixture over the tots. Top with 1/2 cup cheese.

Bake at 350 for 45 minutes.
