One pan meals are my favorite! Especially for weeknight meals where dinner needs to come together quick! This One Pan Broccoli, Chicken, and Rice is one of our family’s favorite meals, I can’t wait for you to try it!
Ingredients:
5 Tbl. butter
1 cup onion, diced
4 garlic cloves, minced
2 lbs. chicken, cubed
2 cans chicken broth
1 1/2 cups rice
3 cups broccoli, cut into bite sized pieces
1/4 cup water
2 tsp. Italian seasoning
1 tsp. salt
3/4 tsp. pepper
1/2 cup heavy cream
1/3 cup parmesan
Directions:
Melt butter on medium heat. Add onion and chicken and cook until chicken is cooked through.
Add the Italian seasoning, salt, and pepper. Mix well. Add in the garlic and saute for a minute.
Add in the chicken broth and rice and bring to a boil. Cover and turn heat to medium low for 15 minutes. Stir occasionally.
Add in 1/4 cup water and broccoli. Cook for an additional 5 minutes stirring a few times.
Add in the heavy cream and parmesan. Mix well.
