Minute Rice is a great option for this recipes because it is so quick. However, you can definitely use long grain rice. They will both work perfectly and taste delicious.

Ingredients for Frito Casserole:
Ground beef
Onion, diced
Taco seasoning
Water
Cooked rice (I use Minute Rice)
Salsa
Kidney beans, drained and rinsed
Olives, drained and sliced
Cheddar cheese, grated
Fritos
Optional toppings: extra Fritos, sour cream, diced tomatoes, and/or Guacamole.
Directions for Frito Casserole:
Brown ground beef with diced onion (drain fat if there is any). When meat is cooked through, add taco seasoning and water. Heat through.
Mix cooked rice with salsa.
Spray 9X13 baking dish with cooking spray.
Place ground beef in the bottom of baking dish.
Spread rice mixture on top of ground beef.
Top rice with beans, olives, and grated cheese. Cover with Fritos.
Bake at 350 degrees for 30 minutes.
Serve and enjoy!

- 3 cups Minute Rice cooked
- 1 ½ cups salsa
- 1 15 ounce can kidney beans drained and rinsed
- 1 6 ounce can olives sliced
- 2 cups cheddar cheese grated
- 2 cups Fritos
Toppings:
- sour cream
- diced tomatoes
- extra Fritos
- guacamole
Instructions
