Minute Rice is a great option for this recipes because it is so quick. However, you can definitely use long grain rice-cook it first. They will both work perfectly and taste delicious. Try using leftover rice-I have not tried that but, it should work fine. Make sure the grains are mixed in well so you do not have clumps of rice in your casserole.

I love to get the kids involved in making dinner. This is a great recipe for little kids to help with. They will love sprinkling the beans, olives, and the cheese on this casserole. Ingredients for Easy Frito Casserole:

  • 1 pound ground beef
  • 1 medium onion diced
  • 1/4 cup taco seasoning
  • 3/4 cup water
  • 1 cup Minute Rice, dry
  • 1 cup water
  • 2 cups salsa
  • 1-15 ounce can black beans or kidney beans, drained and rinsed
  • 1-6 ounce can olives, sliced-reserve some for serving, if desired
  • 3 cups cheddar cheese, grated
  • 21/2-3 cups Fritos

Toppings:

  • sour cream
  • diced tomatoes
  • extra Fritos
  • Guacamole or avocado
  • reserved olives
  • cilantro
  • jalapeños

Directions for Easy Frito Casserole:

  1. Brown the ground beef with the diced onion, in a frying pan.
  2. Drain fat from the ground beef and onion mixture, if any.
  3. Add taco seasoning and 3/4 cup of water. Stir to heat through and thicken.
  4. Place ground beef mixture into a 9×13 baking dish.
  5. Add the dry Minute Rice, one cup water, salsa, drained and rinsed beans and sliced olives to the baking dish and stir to combine. 
  6. Cover the meat mixture with grated cheese and then, top the cheese with the Fritos.
  7. Bake uncovered at 350° for 30 minutes.
  8. Serve with your choice of toppings and enjoy!
