We love soup. This Taco Soup is really easy and really good. If you like more spice, use a medium or hot enchilada sauce.

Ingredients Needed For Taco Soup:
15.25 ounce can corn, drained
15 ounce can black beans, drained and rinsed
12.5 ounce can chicken, drained
10 ounce can green enchilada sauce
14.5 ounce can petite diced tomatoes
14 ounce can chicken broth
1 ounce package taco seasoning
Soup Topping options:
Grated cheddar cheese
Tortilla chips
Sour cream
Cook’s Note:
This recipe is very versatile. I’ve used different beans, two cans of beans instead of one, a can of black-eyed peas along with red beans, green chile salsa in place of the enchilada sauce, added a can of cream of chicken soup. Have fun experimenting with this delicious soup.
Instructions:
Place all ingredients in a slow cooker and heat on low for three hours.
Serve with grated cheddar cheese, sour cream, and tortilla chips.

I just made this and it was INCREDIBLY easy and so yummy. I did make two small changes. Instead of canned chicken I used 4 shredded chicken thighs I had pressure cooked yesterday. Also, I warmed it up on the stove top and let it simmer for 20 minutes.
Even my husband liked this! He doesn’t like chicken and soup isn’t a meal to him. He ate 2 bowls of it and then was standing over the pot eating it with chips. We topped it with chips, fiesta cheese blend, and plain greek yogurt!
