This chicken and black bean tacos recipe is a great slow cooker meal. It’s great to be able to put dinner in a slow cooker and not have to think about it until dinner time.
Ingredients:
2 pounds chicken breast
14.5 ounce can chicken broth
15 ounce can black beans, drained and rinsed
15 ounce can corn, drained
10 ounce can Rotel
1 1/2 cup brown rice
1/2 teaspoon cayenne pepper
1 clove garlic, minced
Flour tortillas
Taco toppings: cheddar cheese, diced tomatoes, salad, and sour cream
Directions:
1. Place all ingredients in a slow cooker. Mix to make sure rice is covered in fluid.
2. Cook on low for eight hours.
3. Shred chicken inside the slow cooker and mix to blend well.
4. Serve in tacos with toppings and enjoy!
