We love fried rice. We decided to add some chicken. We hope you enjoy this chicken fried rice recipe-we did.
Ingredients:
2 14.5 ounces cans chicken broth
2 cups rice
1 pound chicken, cooked and diced
1 onion, diced
12 ounce frozen peas and carrots
1/4 cup soy sauce
Cooks Note: also good with two beaten eggs scramble cooked in when you add the peas and carrots.
Directions:
1. Cut chicken and cook in a large frying pan with the diced onion.
2. While the chicken cooks, boil the rice in the chicken broth-NO water.
3. When chicken is cooked through, add frozen peas and carrots (and eggs if desired). Stir to combine and heat through.
4. Add rice to the chicken mixture. Stir in soy sauce and heat through.
Serve and enjoy!
