Absolutely! Try adding sweet potatoes, green beans, mushrooms, or bell peppers for extra flavor and variety. Probably not all of these suggestions plus the ones in this recipe 😂 But, it is your roast, try what sounds good to you.
5. How do I make a gravy with the cooking juices?
After the pork is done cooking, strain the juices and simmer them on the stove. Mix 1-2 tablespoons of cornstarch with water in a bowl or glass measuring cup. Then, whisk into the simmering juices until thickened.
NOTES:
1-For us, peeling and chopping vegetables is the most time consuming part of recipes like this one. So, I didn’t peel the carrots or potatoes which made it quicker to put together-make sure to scrub them well when washing.
2-We love recipes we can put together and then go about our day doing all the things we all do: work, cleaning, laundry, caring for children, friends and family. The slow cooker makes this possible-we love the Crock Pot!

- 2 1/2 pound pork loin
- 1 tbsp Lawry’s Seasoning Salt
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp chili powder
- 2 pounds carrots washed and cut into chunks
- 2 1/2 pounds potatoes washed and cut into chunks
- 1 large onion peeled and cut into chunks
- 1/2 cup water
To Thicken Gravy:
- 2 tbsp cornstarch + 2 tbsp water whisk together when making the gravy

How to Make Slow Cooker Pork Loin and Vegetables:
- Combine Lawry’s Seasoning mix, onion powder, garlic powder, salt, pepper, and chili powder in a small bowl and mix together well.
- In a frying pan, brown each side of the pork loin-coating each side with the above seasoning mixture before browning each side.
- Pour 1/2 cup of water into the bottom of the slow cooker.
- Place pork loin in the bottom of the slow cooker and top the pork loin with chopped carrots, chopped potatoes, and chopped onion.
- Cover and cook on low for 8 hours.
- When pork loin has cooked through and the veggies are tender, Remove the pork loin and vegetables from the Crock-Pot and place on a serving platter. Cover with foil and set aside.
- If making gravy to go with the pork loin and veggies, strain the juices from the slow cooker to remove any pieces of meat or vegetables.
- Place strained juiced into a sauce pan and simmer on the stovetop.

I made this for tonights dinner. The pork literally fell apart and had a nice flavor. I put the roast (fat side up) & placed carrot, onions & potatoes in the bottom of the crockpot. The seasoning from searing the meat melded into the vegetables . It was delicious. Next time I make this, I will pour juices into a saucepan & make a thicker gravy…. I give it 5 stars
