I love how elegant yet simple this Sun Dried Tomato and Spinach Pasta is! It comes together so quickly and it is one of the easiest meals you can make!
16 oz. rigatoni pasta
1 cup Bella Sun Luci Sun Dried Tomatoes in olive oil and Italian herbs
2 tbl. olive oil
1/2 cup onion
4 garlic cloves, minced
1 cup red bell pepper
4 cups spinach
1 1/2 cups half and half
1/2 cup milk
1/2 tsp. red pepper flakes
1/2 cup parmesan cheese
salt
Cook pasta according to package directions in salt. Drain. Set aside.
In a skillet pan, cook tomatoes and garlic in olive oil. Add onion, red pepper, and spinach until tender. Add half and half and milk. Bring to a low boil. Add parmesan cheese, red pepper flakes and salt. Let boil for about 1 minute and then turn heat to low. Simmer and stir until all cheese melts and the sauce turns creamy.
Add pasta to the sauce and turn to coat.
