Ingredients Needed for Sautéed Zucchini:
2 medium zucchinis washed, halved and sliced
Large onion, sliced and cut into medium sized pieces
1 large garlic clove, minced
1 Tablespoon olive oil
1/2 teaspoon salt, or more to taste
1/4 teaspoon pepper, or more to taste
Freshly grated parmesan cheese
Instructions for Sautéed Zucchini:
Pour olive oil into a deep frying pan. Heat oil and add zucchini, onion, and garlic.
Cook, stirring frequently so the mixture does not burn. Add the salt and pepper to taste.
I like the onion and zucchini a little browned-I add a little water to the pan as it browns in the bottom of the pan. This gives the mixture a good flavor. Just lightly browned or lightly caramelized. Cook for 20-25 minutes or until desired tenderness.
Serve sautéed zucchini hot with freshly grated parmesan cheese on the top. This can be a side or a light meatless meal.
