How To Make Mini Pancakes:
This is such an easy breakfast and the kids will love dipping these cute little pancakes in their favorite syrup or whipping cream.
Pre-heat the oven to 325 degrees.
In a mixing bowl, make pancake mix according to the package directions. I used two cups of the pancake mix and 1 1/3 cups of water.
Spray mini muffin/cupcake pan with non-stick cooking spray.
Mix until combined.
Fill the mini muffin pan with the batter. Fill each cup 3/4 full. My mini muffin pan has 24 cups and I used all of the batter to fill the 24 cups.
Now, add toppings to your mini pancakes. I like to add blueberries, mini chocolate chips, sprinkles and cinnamon and sugar-that is already combined. Lightly press the blueberries, and chocolate chips into the batter.
Bake for 9-10 minutes.
Serve with syrup for dipping, whipping cream and fresh fruit. Add some sausage or bacon for a delicious and fun breakfast. Enjoy!
