Ingredients Needed For One Pan Tuscan Tortellini Casserole:
- 3/4 cup sun dried tomatoes, (in olive oil and Italian herbs) chopped and extra oil removed by pressing with a paper towel
- 2 cloves garlic, minced
- 1/2 cup parmesan cheese, shredded
- 1/2 tsp pepper
- 1/2 cup milk
- 1/4 cup basil pesto, pre-made
- 1 1/2 cups rotisserie chicken, shredded or chopped
- 3 cups spinach, fresh
- 3 cups cheese tortellini, frozen
- 1 cup mozzarella, shredded
How To Make One Pan Tuscan Tortellini Casserole:
- Spray a 9 x 13 baking dish with non-stick cooking spray.
- Place chopped sun-dried tomatoes, minced garlic shredded parmesan, black pepper, milk, pesto, chopped chicken and spinach into the baking dish. Mix to combine.
- Add the cheese tortellini and mix carefully, do not break the tortellini.
- Cover with aluminum foil and bake in a 350° oven for 30 minutes.
- Remove from the oven and remove the foil.
- Top with grated mozzarella cheese and place the baking dish back into the oven to melt the cheese (3-5 minutes).
- Remove from the oven and enjoy this simple and flavorful one pan casserole.
