Ingredients Needed for Vegetable Spaghetti Salad:
Spaghetti pasta
Armenian cucumbers
Carrots-full size or baby carrots
Cherry tomatoes
Italian salad dressing
Salad Supreme seasoning
Freshly grated parmesan cheese
Instructions for Vegetable Spaghetti Salad:
Bring water to a boil in a large pot. Add spaghetti pasta and cook for 11 minutes (I do not break my spaghetti pasta but, you can break it up if you would prefer). Drain pasta and rinse with cold water. Set aside and allow pasta to drain while you finish cutting the vegetables.
While the pasta cooks, peel and slice the cucumbers into bite-sized pieces. If the seeds are big, scrape them out.
Peel and slice the carrots-just slice if using baby carrots.
Cut the cherry tomatoes into quarters.
Place all of the cucumbers, carrots, tomatoes, and pasta into a serving bowl.
Add Italian dressing, Salad Supreme seasoning and parmesan cheese. Stir to combine.
Refrigerate to chill.
Serve with more grated parmesan to garnish, if desired.

Vegetable Spaghetti Salad
A simple salad recipe made with garden vegetables.
Ingredients
- 6 ounces spaghetti pasta cooked, drained and rinsed
- 2 1/2 cups Armenian cucumber peeled and sliced
- 1 cup carrots sliced
- 12 cherry tomatoes quartered
- 1 tbsp Salad Supreme seasoning
- 1/2 cup Italian salad dressing
- 1/4 cup Parmesan cheese freshly grated-plus more to garnish, if desired
Instructions

Cook pasta for 11 minutes. Drain and rinse in cold water. Set aside.

Peel, scrape out the seeds if they are big and slice cucumber into bite-sized pieces.

Peel and slice carrots into bite-sized pieces or if using baby carrots, just slice.

Cut cherry tomatoes into quarters.

In a bowl, combine sliced cucumbers, carrots, quartered tomatoes, pasta, Salad Supreme seasoning, Italain dressing and parmesan cheese.
