I made these easy buttermilk, Parmesan mashed potatoes today-with instant mashed potatoes. It was a bit of an experiment for me. They turned out really good.
Ingredients:
1/4 cup butter
1 1/4 cup buttermilk
1 3/4 cup milk
1 teaspoon pepper
2 cups instant potato pearls (approximately)
1/4 cup grated Parmesan cheese
Directions:
1. Bring butter, buttermilk, milk and pepper to a boil. Stir with a whisk. It will look weird because the buttermilk will separate. But, it’s okay. You could add a minced garlic clove too, if desired.
2. Remove from heat and stir in 1 cup of the instant potatoes. Then, stir in the other cup a little at a time to get the consistency you like.
3. Stir in the 1/4 cup grated Parmesan cheese.
