Ingredients Needed for Chicken Tostada:
1 1/2 to 2 pounds chicken breasts
1 cup Italian salad dressing
2 teaspoons Lawry’s Seasoning Salt
Tostadas
Toppings:
15 ounce can black beans, drained and rinsed
Iceberg lettuce, shredded
4 green onions, sliced (or more as desired)
3 Roma tomatoes, diced (or more as desired)
Guacamole-store bought or my favorite: Guacamole
Sour cream
Cheddar and Monterey Jack cheese or Colby Jack cheese, grated
Cilantro leaves, optional
Instructions for Chicken Tostada:
Cook chicken in a slow cooker with 1 cup water (or chicken broth, if you prefer) on low for 5 to 6 hours-until chicken is cooked but before it starts to brown on the edges. Make sure chicken is cooked through-165 degrees Fahrenheit.
While chicken cooks:
Prepare Guacamole and Cilantro Lime Dressing. Refrigerate.
Prepare garnishes and refrigerate.
When chicken has cooked through, remove it from the Crockpot and shred it. Drain chicken juices from the slow cooker.
Turn slow cooker to warm and place the shredded chicken back in the slow cooker.
Coat the shredded chicken with Italian salad dressing and Lawry’s seasoning. Stir to combine and cover to keep warm.
Build your tostada: place desired number of tostadas on a baking sheet and cover with cheese.
Place in the oven under the broiler-just to melt the cheese.
Top with shredded lettuce, chicken, black beans, more shredded cheese, tomatoes, green onions, sour cream, Guacamole (homemade or purchased), cilantro leaves and Cilantro Lime Dressing. Serve.
