Slow cooker recipes are the best! Especially ones where you can just dump the ingredients and go. That is why I LOVE this Salsa Lime Chicken so much, because you dump it in the crock pot, come back a few hours later and it is packed with flavor and ready to eat.
Plus, this recipe is fantastic because I can dump the chicken in while it is still frozen. This really saves me when my brain forgets to take chicken out to let thaw or I drop the ball on dinner.
This is one of the crock pots I use and I love it! I have had it for years and it is yet to disappoint me. It is a smaller crock pot but I love not having to lug out my huge one for every crock pot meal.

Salsa Lime Chicken
An easy dump and go crock pot recipe that makes amazingly flavorful chicken.
Ingredients
- 1 lb. chicken breast
- 2 Tbsp. taco seasoning
- 12 oz. salsa
- 4 Tbsp. lime juice
- 2 cloves garlic minced
Instructions

In the crock pot, combine taco seasoning, salsa, lime juice, and garlic cloves. Stir to combine.

Add in the chicken and spoon mixture on top to coat it.

Cover with lid and cook on high for 3-4 hours or low for 6-7 hours.

After the time is up, shred the chicken and stir it up in the mixture to coat all of the shredded pieces. I like to leave the chicken while I finish up the rest of dinner to allow all of the shredded chicken time to soak up all of the flavor.

Serve this chicken over rice or in tortillas with rice, beans, lettuce, tomato, cheese, and sour cream.
