I love breakfasts that are in muffin cups. These Mini Breakfast Ham Quiches are the best! They are individual and so cute! These quiches are easy to throw together and don’t require me to stand over the stove watching them, so they are a regular at my house. I hope you love them as much as we do!
Ingredients:
5 eggs
1 cup milk
1 1/2 cups cheddar cheese, shredded
1/2 cup bacon bits
1/4 cup onion, chopped
1/4 teaspoon red pepper flakes, optional
12 slices deli ham
Pepper
Preheat oven to 350 degrees. Beat together eggs, milk, cheese, bacon, onion, red pepper flakes and pepper.
Grease a muffin pan and place one slice of ham in each muffin cup.
Pour egg mixture evenly into each muffin cup.
*Note: Muffin cups will be very full, that’s good 🙂
Bake for 25 minutes or until a toothpick comes out clean.
Remove from oven and run a knife around the edges of the muffin cups to loosen the quiche for an easy removal.
