Ingredients Needed for Tomato Basil Pesto Soup:
1/2 cup butter
4 Tablespoons flour
2 cups V-8 juice
1 14.5 ounce can chicken broth
29 ounces petite diced tomatoes including juice-blended until smooth
1 cup half and half
1 teaspoon hot sauce
1-1/2 Tablespoons basil pesto (I use Kirkland’s Basil Pesto-it’s really good!)
1/2 teaspoon pepper
1/2 teaspoon salt
1/4 cup fresh parmesan cheese, freshly grated
Instructions for Tomato Basil Pesto Soup:
1. Melt butter in a large pot. Mix the flour into the butter making a roux.
2. Put tomatoes with the juice in a blender and blend until smooth.
3. Add blended tomatoes to the roux.
4. Add V8, chicken broth, salt, and pepper. Stir as you bring it to a boil.
5. Reduce heat and add half & half, hot sauce, and basil pesto.
6. Combine and heat through.
7. Serve hot and sprinkle with freshly grated parmesan cheese.

Ingredients
- 1/2 cup butter
- 4 tbsp flour
