Ingredients Needed for Slow Cooker Chicken Noodle Soup:
2 pounds chicken breast (or I have also used 5 cups chopped rotisserie chicken)
4 14.5 ounce cans chicken broth
3/4 cup onion, chopped into small pieces
3 cups sliced celery
3 cups sliced carrots
2 chicken flavored bouillon cubes
2 bay leaves
1 tsp poultry seasoning
1/2 teaspoon salt
3/4 teaspoon pepper
1 1/2 teaspoon dried parsley
3 cups No Yolks extra broad egg noodles
Instructions for Slow Cooker Chicken Noodle Soup:
1. Place thawed chicken in the bottom of a slow cooker. (If using rotisserie chicken, place the chopped chicken into the bottom of the slow cooker and skip the step where you remove the chicken and chop it 😊)
2. Place the bay leaves, salt, pepper, dried parsley, chopped onion, sliced celery, and sliced carrots on top of the chicken breasts.
3. Pour all of the chicken broth over the chicken and vegetables. Place the two chicken bouillon cubes in the slow cooker. Cover and cook on low for 8 hours.
4. After 8 hours, or 15 minutes before the eight hours have passed, remove the chicken and the bay leaves. Set the chicken aside and throw the bay leaves away.
5. Place three cups of extra broad egg noodles (No Yolks brand works the best) in the crockpot with the soup. Stir and cover to let the egg noodles cook.
6. Cut the chicken breast into bite-sized pieces. It should be very tender so, don’t be surprised if it shreds.
7. Place the chopped chicken back into the slow cooker. Stir and cover to heat through.
8. Serve this delicious soup when the egg noodles are desired tenderness. Top with a little extra dried parsley, if desired. Serve with Buttery Rolls or your favorite bread and enjoy!
