This is my favorite dinner! I could eat it once a week… at least. It is crispy on the outside while tender and juicy on the inside. I love how quick it comes together on a busy weeknight and so will you.
Ingredients:
2-2.5 lbs chicken breast
1/2 cup Panko bread crumbs
1/2 cup Italian style Panko bread crumbs
2/3 cup grated Parmesan cheese
2 tablespoons parsley
1/8 teaspoon salt
1/8 teaspoon pepper
4 tablespoons butter, melted
3 tablespoons lemon juice
3 garlic cloves, minced
Directions:
In shallow bowl melt butter. Then add lemon juice and garlic. Mix well.
In separate shallow bowl, mix bread crumbs, parmesan, parsley, salt and pepper.
Dip each chicken breast in butter mixture, bread crumb mixture, butter mixture again and bread crumb mixture a second time.
Place chicken in a 9×13 pan lined with greased foil (for easy clean up).
Bake at 350 degrees for 45 minutes or until no longer pink.
