We love to do fun things for the holiday-for more than just the day, however. We like to spread out the fun with the recipes listed below: Valentine’s Day Cinnamon Roll one day, Valentine’s Day French Toast Bites, these pretty Valentine’s Day Mini Cheesecakes, Valentine’s Day Peanut Butter Truffles, and/or Valentine Cocoa Krispies Kisses.
Ingredients Needed for Valentine Mini Cheesecake:
1 8 ounce cream cheese, softened
1/3 cup sugar
1/2 Tablespoon lemon juice
1/2 teaspoon vanilla
1 egg
1 can of cherry, raspberry, blueberry, blackberry, OR mixed berry pie filling
12 vanilla wafers
12 marbles if you want to make the cheesecakes heart-shaped
Cupcake papers
How to Make Valentine Mini Cheesecakes:
First, Place 12 cupcake papers in a muffin pan. Place one vanilla wafer in the center of each cupcake paper. Set aside.
When cream cheese has softened (make sure it is room temperature), beat cream cheese, sugar, lemon juice, vanilla, and egg with an electric mixer until well blended and fluffy.
If making heart-shaped mini cheesecakes, place one marble between the pan and the cupcake paper.
Then, Divide the cream cheese mixture between the 12 cups.
Next, Bake at 375 degrees for 15 minutes. Cool on a wire rack.
Lastly, after cheesecakes have cooled, top each cheesecake with the fruit pie filling you have chosen.
Refrigerate until chilled.
Serve cold. Keep leftovers, if any, in the refrigerator.

- 1/2 tsp vanilla
- 1 egg

Instructions
