You will love this layered flavorful dish with the ground beef, mushroom soup, garlic, onion, green chilies, green Chile enchilada sauce, monterey jack cheese, and the tortilla chips. It doesn’t take long to put together. Then, just the baking time and dinner is ready.
Ingredients Needed for Mexican Casserole:
1 pound ground beef
1/2 small onion, chopped
2 small garlic cloves, minced
10.5 ounce can cream of mushroom soup
4 ounce can diced green chilies
10 ounce mild green Chile enchilada sauce
2 cups crumbled tortilla chips
2 1/2 cups Monterey Jack cheese, grated
Optional for serving: sour cream, sliced olives, cilantro and/or diced tomatoes.
Instructions for Mexican Casserole:
Pre-heat the oven to 350 degrees.
Spray a 2.5 quart baking dish with non-stick cooking spray. Set aside.
Brown the ground beef with the onion.
When the meat is nearly cooked through, add the minced garlic. Cook until completely cooked through.
Drain fat when meat has cooked through.
Stir in the cream of mushroom soup, green chilies and the green Chile enchiladas sauce. Heat through.
Crumble the tortilla chips.
Put 1/2 of the crumbled tortilla chips in the bottom of the greased baking dish.
Top with 1/2 of the meat mixture.
Top the meat mixture with 1/2 of the grated cheese.
Repeat the layers with the other half of the ingredients.
Cover and bake for 35-40 minutes at 350 degrees.
Serve this Mexican Casserole hot and enjoy with slice olives, sour cream, cilantro and diced tomatoes, if desired

Ingredients
- 1 pound ground beef
- 1/2 small onion diced
- 2 cloves garlic minced
- 10.5 ounce can cream of mushroom soup
- 4 ounce can diced green chilies

Place 1/2 of the crushed tortilla chips in the bottom of the baking dish.

Top the tortilla chips with 1/2 of the meat mixture and half of the cheese.

Repeat layers with remaining ingredients.
