This is the easiest recipe. Most Jell-O and Jell-O pudding salads are fairly quick and easy to put together. They can also be made a day early, if that helps with your planning and prep time. I like to mix things in a certain order but, all of the ingredients could be dumped into a bowl and mixed well. I just like to make sure my pudding powder gets mixed in with the juice from the pineapple before I add the other two ingredients.

1-3.4 ounce box instant pistachio pudding
1-20 ounce can crushed pineapple, DO NOT DRAIN
1-16 ounce container small curd cottage cheese
I-8 ounce container extra creamy Cool Whip whipped topping.
Instructions for Pistachio Pineapple Jell-O Salad:
Two important details of this recipe are the cottage cheese and Cool Whip. Make sure the cottage cheese is small curd and the Cool Whip is extra creamy!! The extra creamy makes it much creamier than the regular Cool Whip.
First, In a mixing or serving bowl, mix the pineapple and pineapple juice with the pistachio Jell-O pudding. Make sure it is blended well.
Then, add the cottage cheese. Mix well.
Lastly, fold in the extra creamy Cool Whip.
Cover the salad with plastic wrap and let it chill in the refrigerator before serving.
Variations: you can add 1 1/2 cups miniature marshmallows and/or 1/2 cup chopped pecans.
