The right way to eat these nachos is to serve the chips on the side so they don’t get soggy-no soggy chips! (Sometimes I eat these nachos with a fork and no chips to save some carbs and calories). My husband would like to have these for dinner every week. They are easy to make and nothing to defrost.

Other yummy options your family may like, but not necessary for these nachos to be delicious: diced onion, diced green pepper, diced or sliced jalapeños, cooked chicken, and/or cooked beef.
Everyone makes their plate of nachos a little different. Everyone gets just what they want! Which I love because, that makes everyone happy!!

Instructions for Nachos:
Begin by spreading a serving size amount of the refried beans on a microwave safe plate. Add some diced green chilies, (diced red, white, yellow or green onion (whatever you have), diced green pepper, diced or sliced jalapeños (I will use fresh, canned or sliced pickled jalapeños, cooked chicken, or cooked beef (also have used canned chicken or canned beef), if desired) and desired amount of the grated cheese-you can use pre-grated cheese but I like to grate my own, I just like it better and how it melts better. Microwave until hot and cheese has melted.
Top with sour cream, guacamole, olives, and tomatoes (and salsa, if desired).
Enjoy!
Don’t forget: If you put your tortilla chips under all of the ingredients, they become soggy. Serve tortilla chips on the side.
