Lemon Chicken Spaghetti

Ingredients:

1 lb. spaghetti

2 lbs chicken, thawed and cubed

1/2 cup olive oil

1/2 cup lemon juice

1/2 tablespoon lemon zest

1 cup Parmesan cheese, grated

1/2 cup milk

1/2 teaspoon dried basil leaves

1/4 teaspoon red pepper flakes

2 garlic cloves, minced

Directions:

In a large skillet, cook chicken until no longer pink. Drain excess liquid.

Cook pasta according to package directions. Drain and add to skillet.

In a mixing bowl, combine the oil, milk lemon juice, Parmesan cheese, garlic, basil, lemon zest and red pepper flakes.

Add sauce mixture to the skillet and toss to coat the pasta and chicken. Season with salt and pepper and garnish with parsley flakes if desired.
